I experimented with this recipe to try and make the right combination of yummy and healthy.  Try them with fruit, a dollop of part-skim ricotta for more protein or just some maple syrup with some toasted pecans spread on top.  I used Bob’s Red Mill Protein Whey powder but you could use whatever you might have at your local store.  This recipe makes about 12 regular size pancakes and each one is 100 calories with 6 grams of protein…so eat at least 3 for a generous amount of protein.  Double the batch and freeze them for a quick breakfast during the week…enjoy!

Ingredients
  • 1 cup white whole wheat flour
  • 2 tsp. baking powder
  • ½ tsp. ground cinnamon
  • ½ tsp. salt
  • 2 tbl. ground flax seeds
  • ½ cup protein powder
  • 1 large egg
  • 1¼ cups milk
  • 1 tbl brown sugar
  • 1 tbl canola oil
  • 1 cup cooked and mashed sweet potato
Instructions
  1. In a bowl, mix together flour, baking powder, cinnamon and salt.
  2. In a separate large bowl, mix together remaining ingredients.
  3. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
  4. Heat a frying pan over medium heat and coat with oil or pam spray.
  5. Use a ¼ cup measure to scoop and pour batter onto pan forming pancakes.
  6. Flip when batter starts to bubble usually 2 minutes each side.
