Sweet Potato Protein Pancakes

- 1 cup white whole wheat flour
- 2 tsp. baking powder
- ½ tsp. ground cinnamon
- ½ tsp. salt
- 2 tbl. ground flax seeds
- ½ cup protein powder
- 1 large egg
- 1¼ cups milk
- 1 tbl brown sugar
- 1 tbl canola oil
- 1 cup cooked and mashed sweet potato
- In a bowl, mix together flour, baking powder, cinnamon and salt.
- In a separate large bowl, mix together remaining ingredients.
- Slowly add the dry ingredients to the wet ingredients and mix until just combined.
- Heat a frying pan over medium heat and coat with oil or pam spray.
- Use a ¼ cup measure to scoop and pour batter onto pan forming pancakes.
- Flip when batter starts to bubble usually 2 minutes each side.
