January has been rough.  The bitter cold and the ice have made me think hibernation might be a good idea.  One of the hardest things to do is to keep up with my morning run during this time of year when I’d rather pull the covers over my head than head out the door into the subzero weather.  But last Sunday we decided to do a road race with some friends and have brunch after.  Our friend Kendra made the yummiest of warm and sweet breakfast bakes made with croissants and our blueberries.  Here’s the link for this great recipe which this food blogger is calling a Blueberry Croissant Puff.  It was delicious served warm and pretty darn good the next day right out of the fridge.

We also snarfed down bagels from Bubby’s Bagel and Deli located in Dover, NH which we toasted and smothered with cream cheese.  I wouldn’t recommend making bagels on your own because Bubby’s makes delicious ones and why re-invent the wheel?  But if you want to try a savory warm muffin with Everything Bagel seasoning then try one of the popular muffin recipes from the new Rise and Run cookbook by Shalane Flanagan and Elyse Kopecky.  This one is published on the NOW foods website.  “Everything Bagel” Superhero Muffins

 

Last but not least if you’re looking for a quick, warm and protein-rich update to your morning bowl of oatmeal then go no further than this recipe from The Clean Eating Couple blog.  The addition of the egg whites makes this oatmeal super creamy and sure to sustain you until lunch.  Don’t forget the blueberries!
