YUM! Strawberry and Rhubarb season are upon us so let’s celebrate with a fun martini.
Strawberry Rhubarb Martini
Recipe type: Drinks
Ingredients
- 1 cup strawberries
- 1 cup chopped rhubarb
- 1 cup water
- 1 tbl lemon juice
- 1 oz. vodka
- ¾ oz.agave nectar or simple syrup
- ice
- cocktail shaker
Instructions
- Combine strawberries, rhubarb, lemon juice and water in saucepan and cook on medium heat until fruit is soft. Strain this mixture into a bowl/container using a sieve or strainer.
- Fill a cocktail shaker with ice and add vodka, agave nectar and 3 ounces of the strained strawberry rhubarb mixture.
- Shake for a few seconds and pour into your favorite martini glass.

What do you do with the lemon juice?
Thanks for the catch Alex. The lemon juice should be added in with the strawberries and rhubarb.
Any ideas of an appetizer that would pair with this cocktail? Easy for a group?
That’s a great question Carol! Hmmm…we are always big fans of shrimp cocktail! Cheese and crackers are pretty good too!
