Blueberry Popsicles
  • Blueberry Simple Syrup:
  • 1 cup blueberries
  • ½ cup sugar
  • ½ cup water
  • Popsicles:
  • 2 cups Greek yogurt
  • Maple syrup or honey to taste
  • Blueberry simple syrup
  1. To make the blueberry simple syrup, combine blueberries, sugar and water in a saucepan over medium heat. Cook until sugar is dissolved.
  2. Transfer blueberry sugar mixture to a blender and purée. Let cool completely.
  3. Mix the yogurt and sweetener of your choice in a bowl.
  4. Fill each popsicle mold alternating between yogurt mixture and blueberry syrup
  5. Wipe any spillage with a damp paper towel.
  6. Insert popsicle handles into the mold.
  7. Place in freezer for 8 hours.
  8. Wrap in greaseproof paper and seal with a piece of tape to store in freezer.
