Hardy Blueberry Pancakes

Ingredients
  • ½ cup white whole wheat flour
  • ½ cup flax & whole grain flour
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • ½ teaspoon salt
  • 1 cup milk
  • 2 tablespoons canola oil or other vegetable oil
  • 1 large egg
  • 1 cup fresh or frozen blueberries
  • vegetable spray or oil to grease cooking pan
Instructions
  1. Mix liquid ingredients together in a bowl
  2. Mix dry ingredients together in another bowl
  3. Add the dry ingredient mixture to the liquid mixture
  4. Whisk until just combined
  5. Fold blueberries into the batter
  6. Oil or spray a large frying pan or griddle
  7. Heat to medium heat
  8. Ladle batter into hot pan to form pancakes
  9. Flip with spatula when bubbles appear on surface
  10. Keep cooked pancakes warm on a pan in a 200 degree oven
  11. This recipe makes 10 pancakes
